Sausage Stuffed Acorn Squash

Ingredients

  • 1 acorn squash

  • 1 tbsp olive oil

  • Salt and pepper

  • Sausage stuffing mix:
    1 tbsp olive oil

  • 1 small onion, diced

  • 1 cup celery, diced

  • 1 tsp Italian seasoning

  • 2 cloves minced garlic

  • 1 roll turkey breakfast sausage

  • 1 small Granny Smith apple, chopped

  • 1 cup seasoned crumbled bread stuffing mix

  • 1/2 cup shredded Parmesan cheese

  • Measuring cup/spoons
  • Toaster oven

Instructions

  • Cut off ends of acorn squash, then cut directly in center, making 2 bowls.
  • Scoop out seeds with spoon.
  • Drizzle with olive oil and season with salt and pepper.
  • Bake squash for 20 minutes or until tender.
  • Set aside.
  • Dish out sausage stuffing mix into the squash.
  • Top with shredded Parmesan cheese.
  • Bake until cheese is melted and golden.
