Salsa Verde ChickenSteve Adams "Trucker Steve"
Inspired by our neighbors to the south, this dish is spiced just right and packs some serious protein.
1 lb chicken breast
1 jar (12 oz) salsa verde
1/2 tbsp olive oil
1 large can crushed pineapple (watch out for hidden corn syrup or acids)
1 medium onion, chopped
2 garlic cloves, minced
Sea salt and pepper, to taste
Optional: 1/2 cup jalapenos, chopped
Optional: Cilantro and lime for garnish
Tools You'll Need
- Cutting board/knife
- Measuring spoons
- Whisk (or fork)
- Slow cooker
- Put all ingredients in slow cooker.
- Cook on high for 4 hours.
- When done, shred everything with a fork.
- Top with cilantro and lime
- Plate and enjoy!
