Salsa Verde Chicken

Steve Adams "Trucker Steve"

Inspired by our neighbors to the south, this dish is spiced just right and packs some serious protein.


  • 1 lb chicken breast

  • 1 jar (12 oz) salsa verde

  • 1/2 tbsp olive oil

  • 1 large can crushed pineapple (watch out for hidden corn syrup or acids)

  • 1 medium onion, chopped

  • 2 garlic cloves, minced

  • Sea salt and pepper, to taste

  • Optional: 1/2 cup jalapenos, chopped

  • Optional: Cilantro and lime for garnish

Tools You'll Need

  • Cutting board/knife
  • Measuring spoons
  • Whisk (or fork)
  • Slow cooker


  • Put all ingredients in slow cooker.
  • Cook on high for 4 hours.
  • When done, shred everything with a fork.
  • Top with cilantro and lime
  • Plate and enjoy!
