Mango-Coconut Green SmoothieSteve Adams "Trucker Steve"
With its light coconut milk base – no dairy here – this vegan green smoothie is utterly creamy and coconutty. Mango gives it a tropical vibe that makes it taste like a day at the beach.
1 cup freshly washed spinach leaves, packed (I generally use packaged, pre-washed baby spinach)
1 cup fresh or frozen mango, diced or cubed
1/2 medium banana
3/4 cup light coconut milk
1/2 cup orange juice
1/2 cup ice cubes
Optional additions: 1 tbsp coconut butter (this adds a bit more coconut flavor, plus fiber and a little protein
Optional addition: 1 tbsp ground flaxseeds (these add some more fiber plus omega-3 fatty acids and a little protein)
Tools You'll Need
- Cutting board/knife
- Measuring cup/spoons
- Place ice cubes in blender.
- Add mango, spinach leaves, banana, coconut milk and orange juice.
- Blend until desired consistency.
- Pour into a glass, or drink from your blender cup, and enjoy!
